As Mr. George Alaniadis says, the endothermic and exothermic reactions, the caramelization of sugars and the Malliard reaction are complimented and completed by each roasters artistry. How light or dark the coffee will be is decided by his own experience. The way the coffee will react to the fluctuations in temperature… these are the elements that really make Artisan Roasting.
